
Lemon and herbs are wonderful when combined in this Lemon and Oregano summery dressing. It's a zesty dressing with a lovely tang from the pepper and mustard. Blending the dressing gives it a beautifully thick and creamy texture which coats salads perfectly. Oregano gives a fresh and earthy taste and smell, perfect as a combo with fresh lemons. Whizz up a batch and keep it in the kitchen in a glass bottle to make mealtime salads quick and easy to prepare and delicious to eat. It's ready to drizzle over any salads or try over the top of smoked salmon or shrimp dishes.
Ingredients for lemon and oregano dressing

Yield: 1 small bottle
- 1 cup extra virgin olive oil
- ½ cup apple cider vinegar
- 1 teaspoon honey
- Juice of 1 lemon
- A clove of garlic
- 1 tablespoon mustard
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried oregano
Add all the ingredients to a nutri bullet or blender and whizz up until it looks nice and creamy. You could mix all the ingredients up by hand, but just mince the garlic first.


Once the dressing is well mixed and creamy, add it to a glass bottle or lidded jar to use throughout the week as a ready made dressing!

This is such a fresh and tangy dressing that it's perfect for so many things.
